Okay so this was one of my 'there's-no-food-in-my-house-throw-it-together' kind of meals, but it turned out an absolute treat!
Greens of choice (I used a salad bag which just had iceberg lettuce and grated carrot in)
Cucumber (as much as you like)
1/2 tbsp Sunflower seeds
1/4 tbsp Sesame Seeds
1/4 tbsp Linseeds
2 tbsp olive oil
2 tsp Apple cider vinegar
Salt, pepper and chilli flakes to taste
4 x Vegan Quorn 'Chicken' Nuggets
Squeeze lemon juice.
1 - Pop the quoin nuggets in the oven to cook according to the instructions.
2 - Start making the salad. Put your greens, cucumber and seeds in a big bowl and mix.
3 - In a separate bowl scoop out the avocado and mash until smooth.
4 - Add the olive oil, apple cider vinegar, salt, pepper and chilli flakes and mix thoroughly to make the dressing.
5 - Combine the dressing with the salad and ensure it coats all the leaves.
6 - By now the nuggets should be ready, so take them out the oven and cut into quarters. Sprinkle over the top of the salad and top with a squeeze of lemon juice.
7 - Enjoy!
