You probably all know by now that I am an absolute pasta QUEEN. Seriously, I love it so much and I am obsessed with coming up with new sauces to mix it up and make sure I get a variety of different nutrients. This super easy tomato sauce is my current fave!
Takes 5-10 mins to prep
Takes 10-15 mins to cook
Glug of olive oil
1 onion, finely diced
1 tsp Lazy Garlic (or 1 clove of garlic, minced)
1 courgette, chopped into quarter moons (half circles, then half again)
1/2 red or orange pepper, chopped
1/2 tbsp tomato puree
1 500g carton of tomato passata
salt & pepper to taste
Pasta of choice!
1 - In a big pan heat a glut of olive oil over a medium heat.
2 - Add the chopped onion and minced garlic and fry for 5 mins or until the onion softens (whilst the onions are sweating put a big pan of water on to boil to cook your pasta).
3 - Add the chopped courgette and pepper and fry for another 5 mins.
4 - Add the tomato puree and mix until all the veg is coated.
5 - Pour in the passata and stir through adding salt and pepper to taste.
6 - Turn the heat down and simmer for 5-10 mins (the longer you simmer the tastier it is). You may need to add a little water to loosen the sauce (I use some of the starchy water from the cooking pasta) or you could add another 1/2 carton of passata if you prefer a lot of sauce.
7 - Drain the pasta and mix with the sauce and serve up!
This is such an easy way to get lots of veg into your meal so don't be scared to experiment with adding other veggies! You could add mushrooms or broccoli, whatever takes your fancy. I served it up with some broccoli on the side but recently I cooked some vegetarian Linda Mcartney sausages and cut them up so it was like spaghetti and meatballs. This basic tomato sauce is really delicious and super versatile, so I know you're going to love it!
