GLJ Pastry Pizzas!

Anyone that knows me, or has been following me for a while will know I am obsessed with pizza! I swear I could eat it every single day....but I won't because my body wouldn't thank me! So here is another, healthier way of enjoying it! 

 

Ingredients:
•Pre rolled puff pastry
•1/2 Can Tinned tomatoes
•1 tsp Oregano
•Coconut spray oil 
•1 Red onion (sliced) 
•1 Cap of Balsamic vinegar 
•1 Cap of maple syrup
•1 Red pepper (sliced)
•Cheese (of your choice - feta/mozzarella/cheddar) 
•Any other toppings you might like (ham, chicken, olives, mushrooms etc)

 

Method:
1. Pre heat the oven to 180degrees (depending on your oven) and line a tray with baking paper. 
2. Cut the pre-rolled pastry into squares and fold the edges over to make a small crust. 
3. Mix the oregano with the tinned tomatoes (you could also add some chilli flakes here if you like a bit of spice) and spread over the base of the pastry. 
4. Put a pan over a low-medium heat and spray the pan with your coconut oil.
5. Add the sliced onion and sweat until they become soft. Once soft add the balsamic vinegar and maple syrup and keep over a low heat until they become caramelised.
6. Add the sliced pepper and caramelised onions to your pastry base and any other toppings you like. 
7. Sprinkle your cheese on top and then pop in the oven for 20-25 minutes or until the pastry is golden.
