Super Easy Stir Fry

If you struggle for quick, healthy and yum recipes for lunch then give this a go! It's easy, good for you and tastes delicious!

 

Chicken and Veggie Stir Fry 


Ingredients 
Coconut oil
1 Chicken breast
3 mini courgettes 
1 red pepper
1 red onion
Big handful of bean sprouts
Drizzle of honey (optional) 

 

First of all get all your ingredients chopped and sliced up however you like them. 
Pop a little bit of coconut oil in a big frying pan and place over a medium heat. 
Chuck the sliced chicken in the pan and fry until almost cooked. 
Add all your veg except the bean sprouts and fry for a few minutes. 
Throw in a nice big handful of bean sprouts and stir around so they warm through. 
You can either serve and eat just as it is or if you have a bit of a sweet tooth add a tiny drizzle of honey/maple syrup and stir around. 

 

Done! It's that easy, really doesn't take long and is yum! Enjoy!
