Two Ingredient Cookies


Who else is a bit of a serial snacker? I definitely am and I seem to ALWAYS be hungry so I love trying new recipes that are quick and easy as well as great for healthy snacking when I'm feeling hungry! I've come up with this super easy recipe that I love so thought I would share with you!

Ingredients 1 large banana (the riper the banana the sweeter the cookies will be) 100g wholegrain rolled oats

Optional

Dark Chocolate chips/ seeds, nuts etc.

Instructions Mash up the banana in a bowl, gradually add your oats, mix together until it's a stodgy consistency (you may need to use more or less oats depending on the size of the banana, so add oats gradually). Line a tray with baking paper and spoon the mixture into cookie shapes on the tray. They can be whatever size you want but I find about a teaspoon of mixture squished down makes a good size cookie. Pop in the oven to bake at 190degrees for 15 mins or until golden brown (keep an eye on them so they don't burn!)

Take out and voila! A quick, easy, yummy but healthy snack to nibble on for all my serial snackers! These are also brill for little ones as a snack after school or even in lunch boxes. They could even make themselves!
